For EU import, Combined Nomenclature heading 1006 is classified by physical grain state: CN 1006.10 paddy/rough (in husk), CN 1006.20 husked/brown (cargo), CN 1006.30 semi-/wholly milled, CN 1006.40 broken rice. Variety name (Lazer, Devzira, Bugday-Goh, Khorezm) is a commercial supplier category, not a customs classification, and variety does not change the CN code.   • Cooking test: 100 g of rice + 200-300 ml of water (depending on the variety), boiling until ready, measuring the time and weight of the finished product.
  • Moisture meter: at least five measurement points per batch, average and maximum.
  • Sieve sizing: four gauge sieves in 1 mm increments, fixing percent in each fraction.
  • Foreign matter check: visual inspection for the presence of extraneous inclusions, the norm is not more than 0.3% by weight.
  • Broken kernels: counting the share of broken grain, the norm is up to 5% for the premium segment, up to 10% for the average.

Three characteristics. The first is water absorption: Devzira collects water in a ratio of about 1:2.8-3.0 versus 1:2.2-2.4 in Lazer, so it requires more liquid in the pilaf formulation. The second is cooking time: 5-8 minutes longer, especially at a low temperature of the oil in the zirvak. The third is the final texture: Devzira gives a denser and more elastic grain that holds the shape after prolonged exposure in the zirvak, while Lazer is optimal for the classic crumbly pilaf.
