The variety grows in the Fergana Valley, in the area of Uchkurgan and Uzgen; traditionally it is kept for a year or two to the grain “ripe”. On the counter, we try to keep the batches of last season - they give the characteristic aroma and dark color of the finished pilaf.
With Devzira, the pilaf comes out more saturated in taste and dense in texture. The variety manifests itself well in Samarkand pilaf with a layered feed and in the wedding Toshkent pilaf; for everyday family pilaf, many prefer a lighter Laser.
At the Uzbek bazaar in Riga, you can buy Devziru packed (1 kg, 5 kg) or by weight. If you plan a large cauldron, the seller on the counter will tell you the ratio of meat, carrots and rice - in Devzira it is slightly different from the Laser due to the greater density of grain.

Yes, I will. Devzira is traditionally soaked in warm salted water for 1-2 hours, then drained water. This helps to reveal the aroma and remove mineral dust; clean cold washing before cooking is also a must.
Devzira has a thin red-brown bran film and a groove along the grain. After grinding, some of the pigment remains; after cooking, the rice acquires an amber color, sometimes with a slight pinkish note.
