Bright orange dried apricots are usually treated with sulfur dioxide (E220), which stabilizes color. Our dried apricots are dried naturally in the sun: the color is dark amber or brownish, the aroma and taste are more difficult, without a characteristic “chemical” note.

In Surkhandarya and Sughda, apricots are dried in the sun, as they have been done in these regions for centuries: the berry loses moisture naturally, without ovens and without chemical treatment. The color of such apricots is saturated amber or brownish; the bright orange dried apricot from a regular supermarket is usually a berry with sulfur dioxide (E220), which stabilizes the color but impoverishes the taste.
Dried apricots are eaten with tea and navvat, added to plov (with a sweet note, in wedding Toshkent), in porridge, in filling for sweet samsa, in desserts with walnuts. Simple Uzbek dessert - dried apricots, walnuts and a bowl of hot Coke tea.
On the counter, dried apricots weigh 200 g, 500 g or 1 kg; the seller will give you a taste of the berry before buying - this is normal practice in the Uzbek bazaar. If you plan to serve guests, it is better to choose a slightly dried specimen; for porridge and pilaf - softer and juicier.
