Uzbek pistachio is a green core in a naturally open light shell, with a rich creamy sweet taste. We have pistachios from the gardens of Surkhandarya and Bukhara region, current or last season, without excess salt and oil.

Uzbek pistachio is traditionally served to tea as part of a set of dried fruits and nuts; it is also added to oriental sweets (nawat with pistachios, halva, rahat-lukum), put in the filling for sweet samsa and used as dessert decoration. The green color of the core is natural, not colored.

Unlike industrial pistachios, which are broken mechanically, the Uzbek is usually harvested already opened: the ripe core itself breaks the shell. You can see it in the shape of the split -- it's uneven, with no trace of tool. A party with a lot of closed shells is usually immature.

Pistachio is eaten as an independent snack with tea, added to plov in a sweet serve (for example, in wedding Toshkent), used in oriental desserts. The purified core is well stored in sealed containers in a dry dark place for up to 12 months.
