In Khorezm, grapes are dried directly in the garden: the berry hangs from the vine or is laid out on mats in the sun. This gives a characteristic taste profile - sweet, but not sugary, with a complex fruity aftertaste. Soybeans are dried in the shade - it remains light golden; objush is scalded with boiling water before drying and get an amber color.
Raisins go to plov (in wedding, in Samarkand layer), in porridge, in baking, in filling for sweet samsa and in a simple serving for tea. Before adding to the pilaf, the raisins are washed with cold water and dried; in the wedding pilaf of Toshkent, it is put whole on the top layer.
A good raisin is flexible and not sticky: if the berry sticks strongly into a lump, it is either excess moisture or added oil (which is not done in Uzbekistan). We keep different varieties on the counter; the seller will tell you which is more convenient for pilaf and which is more convenient for tea.
