Arslanbob is about 11 thousand hectares of wild walnut groves; here the walnut grows without planting, and local families collect it. The collection season is September-October, and each batch is marked by season. We have a nut on the counter of this or last season, no longer.
In Uzbek and Central Asian cuisine, walnut goes to desserts (with dried apricots and navwat for tea), to filling for sweet samsa, chak-chak and traditional pilaf. Nut goes well with honey, dried fruits and coke tea - this is a simple and hearty afternoon without sweets.
Peeled walnut oxidizes in air faster than in the shell: it is better to keep it in the refrigerator in a sealed container or in the freezer. For long storage - a freezer, up to 12 months; in the open form, the nut loses freshness in 2-3 weeks.
