Achichuk (Uzbek tomato salad)

Achichuk is a simple Uzbek salad, which is traditionally served to pilaf and kebab as a “fresh counterpoint” to fatty meat cuisine. The composition is minimal: finely sliced tomatoes, onions with thin semi-rings, fresh greens and a drop of vinegar. Prepared in 5 minutes, and makes the Uzbek table balanced.

Instructions

    Step 1. Cut the tomatoes in thin slices or halves, removing the dense core.

    Step 2. Cut the onions with thin semi-rings; pour boiling water for 30 seconds, then cold water - this will remove the bitterness.

    Step 3. Chop big greens.

    Step 4. Put everything in a bowl, sprinkle with salt, pepper; pour with vinegar.

    Step 5. Stir gently; let stand for 5 minutes.

    Step 6. If desired, add cubes of fresh hot pepper and a drop of olive oil.

Technological tips

  • Tomatoes are necessarily ripe; greens will give a sour, not sweet taste.
  • Onion bitterness is removed by scalding; without this step, the onion can "clog" the taste.
  • Vinegar is no more than spoons; the target is a light sour, not a marinade.
  • Serve immediately after the salt - otherwise the tomatoes will let the juice and lettuce "wet".
