Chuchvara (Uzbek dumplings)

Chuchvara - small Uzbek dumplings (twice smaller than Russian), which are brewed right in a rich meat broth with tomato and onions. This dish is "two in one": both soup and the second. Chuchvara is traditionally served in Uzbek families for a daily lunch - it is faster in cooking than pilaf, but at the same time is just as hearty.

    Step 1. Mix the dough, cover and leave for 30 minutes.

    Step 2. In the pan, roast the beef for the broth for 5 minutes.

    Step 3. Add the onions and carrots, warm up for 5 minutes.

    Step 4. Enter tomatoes and paste, stew for 5 minutes.

    Step 5. Pour 1.5 liters of water, boil the broth for 45 minutes.

    Step 6. In parallel, make a filling: beef + onions + spices.

    Step 7. Rotate the dough thinly (1.5mm); cut in 3x3cm squares.

    Step 8. For each square - a pinch of filling (with beans); pinch with a triangle, connect opposite angles.

    Step 9. When the broth is ready, add cue and coriander, salt.

    Step 10. Dip the cuchvara in the boiling broth; boil 7-8 minutes before surfacing and another 2 minutes from above.

Technological tips

  • Chuchvar is smaller than Russian dumplings: the square of the dough is 3 cm, not 5-7.
  • Do not cook cuchwara separately from the broth - it is brewed directly in it, giving meat juice.
  • If done in advance, freeze raw on the board, then pour over.
  • Serve - deep bowl, broth with dumplings, greens on top, sour cream separately.
