Coupled mantles

Manty - large steam dumplings with chopped meat and a large amount of onions, a classic of the Uzbek and Kazakh table. They are prepared in a manto cooker (Uzb. "kaskanda") - a multi-storey steaming device, where mantas are boiled over boiling water for 40-45 minutes. Dough - fresh, thin, filling - chopped, juicy, with a pinch of cumin.

Instructions

    Step 1. Mix the dough: flour, water, egg, salt; stir for 10 minutes until elastic. Cover it, leave it for 30 minutes.

    Step 2. Cut the meat with a 5 mm cube knife; do not pass through the meat grinder.

    Step 3. Cut the onions with a small cube; the fat with the same cube.

    Step 4. Mix meat, onions, fat, spices; add 150 ml of cold water - it will give juiciness.

    Step 5. Roll the dough into a thin layer (2 mm); cut into 10x10 cm squares.

    Step 6. For each square, a tablespoon of filling.

    Step 7. Blind the mantas with a “boat”: connect opposite corners and side edges.

    Step 8. Lubricate the mantower nets with oil; lay out mantas with gaps of 1 cm.

    Step 9. Cook for a couple of 40-45 minutes from boiling water from below.

    Step 10. Serve immediately, with sour cream or kaymak and greens; add black pepper on top.

Technological tips

  • Onions are 1:1 for meat; without this, manta will be dry.
  • 150 ml of cold water in the filling - the secret of juiciness; do not miss.
  • Roll the dough as thinly as possible - thick dough changes the dish.
  • If there is no mantower, you can use a conventional steamer with small cells.
