Mastava (rice soup)

Mastava is “pilaf in the form of soup”: the same ingredients, but with much more broth. In Uzbek, “mastava” is literally “liquid”. Cooked in the same pot, meat, vegetables and rice are cooked together. It's a hearty homemade dish for everyday lunch - especially good on cold days.

    Step 1. Rinse the rice.

    Step 2. In Kazan, warm the butter, roast the meat for 5 minutes.

    Step 3. Add the onions, warm up 4 minutes.

    Step 4. Enter the carrots and peppers, roast for 3 minutes.

    Step 5. Put tomatoes, garlic, spices; stew for 5 minutes.

    Step 6. Pour 1.5 liters of water, bring to a boil; add the potatoes.

    Step 7. After 10 minutes, sprinkle the rice; cook 20-25 minutes on a quiet heat.

    Step 8. Sprinkle, let brew for 5 minutes; serve, sprinkling with greens.

Technological tips

  • Do not wash the rice too much - starch gives the desired density to the mastava.
  • If you want even more satiety, add boiled nohat together with potatoes.
  • Good for breakfast the next day - the mastava only gets better.
  • You can serve with a cold katyk (Uzbek sour milk drink) or a spoonful of sour cream.
