Mastava is “pilaf in the form of soup”: the same ingredients, but with much more broth. In Uzbek, “mastava” is literally “liquid”. Cooked in the same pot, meat, vegetables and rice are cooked together. It's a hearty homemade dish for everyday lunch - especially good on cold days.

Step 2. In Kazan, warm the butter, roast the meat for 5 minutes.

Technological tips
- Do not wash the rice too much - starch gives the desired density to the mastava.
- If you want even more satiety, add boiled nohat together with potatoes.

- You can serve with a cold katyk (Uzbek sour milk drink) or a spoonful of sour cream.
